12 ounce Spam diced into ½-inch cubes
2 tablespoon neutral oil divided
5 clove garlic minced
4 piece scallions whites and greens separated
1 cup frozen mixed vegetables
3 piece eggs beaten
5 cup cooked white rice day-old, refrigerated
3 tablespoon low-sodium light soy sauce
1 teaspoon kosher salt
1 teaspoon white pepper
0.5 tablespoon sugar
0.25 teaspoon MSG
1 teaspoon sesame oil
1 tablespoon sesame seeds
Crisp the Spam
Dice Spam into ½-inch cubes. Heat 1 tablespoon oil in a wok. Cook Spam 2–3 minutes until golden.
Cook aromatics
Add garlic and scallion whites. Stir-fry 15 seconds. Add frozen vegetables and cook 1–2 minutes.
Scramble eggs
Push veg aside. Add oil. Pour in beaten eggs and scramble until 80% cooked. Fold into vegetables.
Add rice
High heat. Add cold day-old rice and stir-fry 3–5 minutes until every grain separates. Season with soy sauce, salt, white pepper, and sugar.
