Rinse
Rinse rice in cold water until the water runs clear, 3–4 changes. This removes surface starch so grains don't clump.

Bring to boil
Combine rinsed rice, cold water, and salt in a medium saucepan. Bring to a full boil over high heat.

Simmer
Stir once, reduce to the lowest heat, cover tightly, and cook 12 minutes. Do not lift the lid.

Turn off heat. Leave the lid on for 10 more minutes. The steam finishes cooking the rice evenly.
