Vietnamese-style fish sauce wings in the air fryer in 30 minutes: air fry at 400°F for 20 minutes until crispy, then toss in a garlic-fish sauce caramel made by crushing garlic and chilli with sugar.

1 pound chicken wings
1 clove garlic
0.5 piece Thai bird's eye chilli
1 tablespoon sugar
0.5 cup water
1 tablespoon lime juice
1 tablespoon fish sauce
Air fry the wings
Pat wings completely dry. Arrange in a single layer in air fryer. Air fry at 400°F for 15 minutes, shake, cook another 5 minutes.
Make the sauce
Crush garlic, Thai bird's eye chilli, and sugar in a mortar until fragmented. Dissolve with ½ cup water, add lime juice, stir in fish sauce to taste.
Toss and serve
Toss hot crispy wings with sauce. Serve immediately.
