Prep oven and pan

Preheat oven to 350°F. Grease a 9×5-inch loaf pan and line it with parchment, leaving overhang on the long sides.
Brown the butter

Melt butter in a small saucepan over medium heat, swirling often, until it smells nutty and the foam subsides to reveal golden milk solids. Pour into a large bowl.
Mix the batter

Mash bananas directly into the brown butter — you want no large chunks. Whisk in both sugars, then eggs one at a time, then vanilla. Fold in flour, baking soda, salt, and cinnamon until just combined.
Bake

Pour into prepared pan. Bake 60–65 minutes until a skewer in the centre comes out with a few moist crumbs. If the top browns before it's done, tent with foil at the 45-minute mark. Cool in pan for 15 minutes before lifting out.

Tips

The blacker the bananas, the better the bread. Freeze overripe bananas and thaw when you're ready — they'll be perfect.
